Our Process

The 24-Hour Brine

Before a single piece of wood touches our smoker, every turkey spends a full 24 hours submerged in our proprietary brine. This isn't a shortcut step — it's the foundation of everything we do. The extended brine pulls deep into the muscle fibers, locking in moisture and building a foundation of flavor that survives hours of smoke and heat. The result is turkey that's impossibly juicy all the way to the bone, with a tenderness that speaks for itself. Most places skip this. We never do.

Each of our four flavors is a proprietary blend developed through years of experimentation specifically for turkey — not repurposed from a chicken recipe, not pulled off a shelf. We don't rush. Our birds go on the smoker at precisely controlled temperatures and stay there for hours — low and slow, the way Texas BBQ was always meant to be done. Our proprietary wood blend is selected to deliver clean, balanced smoke that enhances the turkey without overpowering it. You taste the bird first, the rub second, the smoke last.
